Five dinners

Five dinners for one evening. Four are Michelin tasting menus, one is not. Every course below is listed as the restaurant writes it, so nobody has to find out at the table.

Tasting menus are fixed: you eat the courses in the order given, and the whole table takes the same menu. The prices are per person, food only, before wine or pairings.

The △ marks a course built on something people commonly push away: offal, oily or cured fish, raw shellfish, game. Count your own. Four out of nine is a different evening from one out of nine.

French, classical, and the richest of the five. Also the most marked: smoked eel, foie gras, langoustine, the mussel in the sea bass, pigeon and the cheese trolley are six of the thirteen stages between them.

This is the summer menu, dated 18 July 2026. September will not be identical. Produce comes from the restaurant's own garden, which is the reason for the green star and also the reason half the courses are built on herbs and flowers.

Delta does not publish its courses. The menu is set around the reservation, and vegetarian or vegan versions are arranged when they call to confirm. Everything else here can be read in advance; this one cannot.

Chinese, with Thai, Indonesian, Korean and Polynesian dishes and Japanese sushi. The full menu is not published online, so it is not listed here. It is on this page because it is the honest other end: the dinner where neither of you has to count anything.

Wine pairings are extra and can cost more than the food. Soil's cheapest is €75 a head; Delta's most expensive is €480 a head.

The date
Wednesday 9 September 2026. Midweek, so the tables are easier than a Saturday.
Dislikes
Every one of these kitchens asks for allergies and dislikes when you book, and swaps courses accordingly. Sending a list is a normal request, not a difficult one.
The menus move
Hytra and Soil both say their menus change constantly. The style holds; the individual courses in September will not all be the ones above.
Deposits
Delta €100 per booking, refundable 72 hours ahead. Soil €60 per person on Fridays and Saturdays, non-refundable but movable. Hytra, Spondi and Saipan: none stated.
Dress code
None of the sites read for this page states one. Ask when you call. It is a normal question and better answered before the night than at the door.
